'Boxed cereals are heavily-processed, nutritionally bankrupt foods that have to be sprayed with chemical vitamins to be remotely healthy. Hence, today I have shared the recipe of a gluten free vegan muesli ( granola) it’s is made up of roasted buckwheat also known as kuttu in Hindi and Amaranth known as Rajgira, Ramadan or chaulai. You can enjoy it as a ready to eat breakfast or snack. Best part it’s suitable for those fasting during Navratri.   Buckwheat is high in the flavonoids rutin and quercetin, and is a good source of magnesium, manganese, copper and fiber. The protein in buckwheat is a high quality protein, containing all eight essential amino acids, including lysine.
